Description
Žutina – literally translated to “little yellow” – refers to the casually found macerated white wines found on the Dalmatian coast near the beautiful and historic town of Šibenik.
Made of the unique and underappreciated organic indigenous Dalmatian grape, Debit, Pomalo Žutina delivers crazy aromas of yellows flowers and lemon drops, the palate delivers bright acidity bursting with flavors of peach, apricot, nectarine, and a refreshing and crunchy Adriatic minerality.
Enjoy after a morning backstroke in the Adriatic, on a ferry ride to Korčula, or at a seaside café in old Dubrovnik.
Vinification
Spontaneous fermentation with indigenous yeasts begins after 3-4 days.
Wine is pressed off skins after 12 days near the end of fermentation. After several days of natural settling, the wine is left resting in inox tank before bottling
