Description
Gianfranco Manca, the most anarchic and revolutionary character in the world of European natural wines presents us with a very pleasant surprise with this Tanka Salina; a natural red wine that is produced using only local Sardinian grape varieties: Cannonau, Monica, Bovale, and Tintillu, macerated for some days on their own skins. These are grapes from old vineyards at over 700 m above sea level, grown without the use of synthetic chemicals, and in the cellar, the only ingredient used is grapes, nothing else. Not even a very small amount of sulphur dioxide is added. Strictly spontaneous fermentation, no filtration, clarification or stabilization. A great and different natural red wine; fresh and elegant.
Vinification
From organic Cannonau, Monica, Bovale and Tintillu local grape varieties macerated for some days with skin contact. 12 months in wood barrel.
Pairing
Aged cheese and red meats… all preparations based on suckling pig, lamb and wild boar.
