FuoriPista is the new “way of wine” that Elisabetta Foradori is exploring with Pinot Gris grape for a great amber wine where the nature made everything and the men just follow her and wait.
Vinification
Gentle destemming without pressing, slow spontaneous fermentation with maceration on the skins in Spanish terracotta amphorae called ‘tinajas’ for about 8 months- This method, dating back to almost time immemorial, allows the wine to slowly refine inside the Spanish amphorae and not have interference on the taste as in the case of wood. The “Fuoripista” in its long maceration reaches a point where it acquires so much color that it begins to slowly release it.

Hot fish appetizers, pasta con le vongole, buzara. Fish, risotto with seafood, white meats.
