Carolina Gatti, lives in a slice of the world of other times, a self-sufficient farm with cows, farm animals and adjoining vineyards. She can be considered the unconventional and revolutionary soul of the Prosecco production area, deliberately avant-garde, out of the discipline, far from conventions, banned … like her bubbles (“Bolle Bandite” is the name of her best known wine!) – faithful to a deep sensitivity for real and authentic wine where the alliance between man and nature, the deep bond with a real world without artifice, rooted and anchored to the earth, can be felt inside every bottle.
In the vineyard, as well as in the cellar, the individual operations are carried out following the principles of organic farming: for phytosanitary treatments, in fact, only copper and sulfur salts are used, and fermentation during winemaking takes place spontaneously, using the indigenous yeasts found on the grape skins.
Before bottling, Carolina’s wines are not filtered, and the doses of added sulfites are reduced to the bare minimum. Determined, courageous, and free, in one of the most conventional wine areas in Italy!
