Description
Canto del Grillo by Abbazia San Giorgio is a natural white wine macerated on the skins of Grillo grapes processed with biodynamic methods. Pleasantly rough and enveloping on the palate, it bears the unmistakable signature of Gianbattista Belvisi. As with his other wines, every bottle opened becomes a journey into the scents of the deepest Mediterranean: delicious aromas of mandarin, lime, pears, almonds, grapefruit, and dried apricots topped with great acidity and obviously all the salinity of the island of Pantelleria.
Vinification:
The processing of Canto del Grillo generally begins in the first week of September when the grapes that have reached the desired ripeness are harvested. The selected and cut bunches are transported in crates to the cellar where destemming, crushing, and pressing occur. Fermentation occurs spontaneously by the indigenous yeasts present on the skins. Depending on the vintage, the duration of the maceration is chosen, which in 2019 was 15 days. During the processing, no correction or filtration is carried out.
The refinement takes place in steel silos for about 4 months, then it is bottled and refined for at least 60 days.

Canto del Grillo is a wine that pairs very well with appetizers in general but stands out with those based on fish and shellfish.
