Bolle Bandite is the most representative wine of Carolina Gatti production. Bolle Bandite is a great prosecco and his name means “forbidden bubbles” because having made it totally naturally Carolina wasn’t allowed to use the name prosecco. Only for real pirates !
The grapes are softly pressed in the cellar to then carry out the alcoholic fermentation in concrete tanks, using only the indigenous yeasts naturally present on the skins. Subsequently the wine remains in refinement on its own fine lees for about 12 months before being bottled
