From 100% organic Xinomavro red grape variety, unconventionally vinified by the blanc de noir method by the Tatsis brothers, for sure the most hard rock wine producers in this part of the world, with the immediate removal of the skins from the must to prevent it from being colored. So, the resulting wine is white.
