We really like this wine from der Rebenhof: Sauvignon Blanc 2017, left few days in maceration and 3 years on his own yeast to gain a great amber color and less cloudy then the 2016 version. Different, natural and biodynamic. A sauvignon like you never tried
Bottled in spring 2020 after storage three years on the yeasts “sur lies”. Fermentation in stainless steel. Not Filtered. No Sulphur added
Raw and lightly cooked shellfish like oysters and shell-on prawns, fresh crab and simply grilled fish such as sea bass. White meat, spices and herbs, sour cheeses. Sushi and sashimi.
