MONTEPILAS
Montepilas is not only the name of this amazing bottle but also the name of one of the autochthonous grape variety of the Guadalquivir Valley (like Mantúa, Palomino, or Zalema) that Josè Miguel start to recover since 2004 when Bodega Marenas was opened.
The wine in the glass appears cloudy and with a bright-yellow color tending towards orange; the surprise comes at the moment of tasting: intense and mature green apple with a pinch of cinnamon, a perfect texture, rich but not overwhelming and perfect even for a warm summer evening. No chemicals and no sulfites added at any point.
Montepilas is a wine that evolves very well in the bottle over time. If you are able not to drink it of course.
Vinification
The grapes are directly pressed into stainless steel tank where they undergo spontaneous fermentation over the course of 10-15 days. The juice ‘naturally decants’ (and lightly oxidizes) through the winter before being bottled unfined, unfiltered, with no additional SO2
Pairing
We recommend serving this chilled and pairing it with grilled fish dishes or mature Paski Sir.
