Description
Turi Bianco from biodynamic Catarratto grapes is one of the few autochthonous white varieties that have always been cultivated in Pachino and known locally as “Mantiddatu” (Mantle). Fresh fruits and great minerality with a fresh acidity, stone fruits, fresh flowers, Mediterranean herbs and a slight saltiness that make it a perfect food wine.
A wine that tells of a land of sun and wind, caressed by the waves of the sea.
Vinification
hand harvesting of ripe and whole, intact grapes, destemming-crushing and fermentation by indigenous yeast in a temperature-controlled tank with maceration for about 5 days. Pressing and end of Primary (alcoholic) fermentation always in the tank. Spontaneous Secondary (Malolactic) fermentation and subsequent decanting to remove gross lees. Aging in concrete tank up to the bottling in the spring following the harvest.
