Cortes de Cima

Cortes de Cima is a small winery located in the wine region of Vidigueira, Alentejo, in Portugal.
The aim of this little winery is to produce quality natural wines that speaks of place; guided by biodynamic farming principles, reviving old traditions, and preserving the genetic diversity and heritage of the region.

At Cortes de Cima they are bringing back the animals, embracing polyculture in order to create a healthy ecosystem and a real green lung.
The cow manure will also be used to make their own biodynamic preparations and compost. The chicken and geese help keep the insect populations balanced. The goal is to take another step towards closing the circle, being less dependent on external inputs.

The grapes at Cortes de Cima are hand-harvested during the cool of night, with the help of headlights and a loudspeaker playing the same ‘Pimba’ playlist on repeat (a mix of Portuguese pop and folk music).
In the cellar, they simply preserve that quality all the way to the bottle. Aiming for fresh and elegant wines in a warm climate, showcasing the diversity of the terroirs and preserving the vitality that comes from thoughtful farming practices.
Fermentation is totally natural and uses exclusively native yeasts with an infusion approach during the maceration, wetting the cap gently during the fermentation period, after which the tanks are drained and pressed using a vertical basket press.
The results are pure and elegant wines that are never boring and always refreshing and attractive.
